Rhubarb is very unusually find in my Moms kitchen in India. Because she gets all vegetables easily and she didn't want to try any other alternative. But, when we stay from India. We always try to find other alternative to make replica of recipe.
One of my friend has suggested this recipe for replacement of Gongura or tamarind based any chutney.

Below is the recipe .
Ingredients:
Rhubarb Stems 2
Green Chilies 2
Sugar 1/2 tsp (optional)
Salt to taste
Coriander leaves 1-2 sticks
Oil 1 tbsp
For Tempering
Mustard seeds
Jeera (Cumin Seeds)
Curry Leaves
Red Chili 1
Asafoetida 1 pinch
Udad dal(Black Gram washed) 1/2 tsp
Chana Dal 1/2 tsp
ginger garlic paste 1/2 tsp
Oil 1 tbsp
Curry Powder
Peanuts 2 tbsp
Chana Dal 2 tbsp
Udad Dal 2 tbsp
Coriander Seeds 1/2 tbsp
Cumin Seeds 1 tsp
Red Chilies 3-4 (You can add more depends on
hotness you need)
Sesame Seeds 1 tbsp
Desiccated Coconut Powder 1/2 tbsp (optional but I added)
Method :
To make curry powder, first dry roast all dals together for 5 mins till aroma comes.Remove from pan. Then dry roast Red Chilies,Coriander seeds and Cumin Seeds. Remove them from flame in 2-3 mins . Then dry roast sesame seeds and coconut powder together and then remove from flame. Once it is cool down, grind in a powder.You can use this powder while making other varieties of chutney.Also you can eat Idli with this powder , putting 1 tsp oil.
To make Chutney, first wash the stems. Cut into small pieces.Take a pan, add 1 tbsp of oil and once heat
heated put pieces into pan. Once Mix well with oil . Add green chilies,Coriander leaves and salt and mix well and close the lid to cook. Keep it on medium high flame for 7-8 mins.It will become soft then add 2 tbsp of curry powder and mix well.Remove from flame and let it cool. Grind in a mixer with a fine paste.
For tempering, take a small tempering pan, add oil, once it is heated, add Asafoetida, mustard seeds,
cumin seeds,udad dal, chana dal. Once it it fried add curry leaves,red chilies and ginger garlic paste . mix well and pour immediately onto grind paste. Your Rhubarb Chutney is ready..!
You can enjoy it with Rice, Idli, Dosa or just eat with you finger.. ;)
