Kalakand Recipe

Kalakand is one of the favourite sweets in India.We get easily it in any sweet shop in India. But in foreign country, it is very dificult to find any sweet easily of our own choice.
So I thought of to do kaland of my own. So I did so much reading on recipe and finally found all recipes are common in procedure.So I prepared by following mix of all ingredients :)

Ingredients:

3 litres full fat Milk
1/2 to 3/4 cup Sugar
chopped nuts to decorate (pista, almonds)
1/2 tsp dhoodh masala (optional)
1 table spoon lamon juice or vinegar
1 tsp butter

Method :

First divide the milk in equal ratio in two seperate heavy bottom pan.In one milk pan, add sugar and dhoodh masala (optional), stir and boil to half.
The other one will be used to make fresh paneer. I dont know we can use old paneer , taste may vary. So I prepared fresh one. Keep the milk to boil.
Once milk is boiled, add lemon juice. once milk curdled, sieve through any cloth, remove excess water . keep it aside.
If another milk comes to half, add this fresh paneer and stir continuously. Continue stirring all the while till it softly thickens into a lump. It is easy to guess is , it doesn't stick to your pan.
take a tray put some butter on it, then keep all lump in it and decorate with chopped nuts .
Then cut the kaland of your own shape. Or you can use cookie moulds for different shapes. Enjoy the sweet..:)
