Fried Colocasia/Arbi Leaves (Patra) Wadi/Rolls


Patra is one of the famous dish in Gujarati/Maharashtrian cuisine.
Colocasia leaves are one of my time pass game in childhood. Because, if we put some water on it, it just run away and looks dry immediately.
I remember, I used to run in my garden area to cut leaves.
But it is totally vanishes as we are staying in outside countries and don't find these leaves around the corners. :)

Colocasia Leaves are very nutritious. So let us see how to make Patra Wadi/Rolls.

Ingredients:

Arbi/Colocasia Leaves 10-12
Besan/Gram flour 2 1/2 cups
Asafoetida 1/2 tsp
Ginger-green chilli paste
Turmeric powder 1 tsp
Chilli powder 1/2 tsp
Coriander Powder 1/2 tsp
Cumin Powder 1/2 tsp
Grated jaggery 1-1/2 tbsp
Tamarind pulp 3 tbsp
Oil 1 tsp
Salt to taste
Water as per Required

For Tadka

Oil 2 tbsp
Mustard Seeds 1 tsp
Cumin Seeds 1 tsp
Sesame Seeds 1 tsp

For Garnish
Dessicated Coconut 1 tbsp
Coriander Leaves


Method :



Wash the colocasia leaves and dry using a kitchen towel.Remove the stems. Keep aside.
Take a steamer . Add some water and put on Gas stove to get enough steam. (If you have no steamer in the kitchen rack, you can simply take one aluminium vessel on which you can easily fit strainer.And cover with plate.)

Take a mixing bowl. Take all ingredients listed except Colocasia leaves. Make a batter using water. Make batter so that it will stick to leaves. Make sure Jaggery is dissolved fully in the batter.

Take a plate or chopping board. Take one leaf of Colocasia and keep on reverse side up.Spread the batter on the leaf.
Take another leaf and follow the same procedure. Do the same way upto 3 leaves.
Now fold the leaves in inward direction. While doing this, fold sides of leaves and continue rolling.Once rolling over, if you wish, you can
cover roll with batter.
Do the same process till you finish your leaves .
Once you get enough steam in the steamer/vessel, Keep these rolls in the steamer tray/strainer.
After 10 mins, take out the rolls. Keep aside to cool down.
Meanwhile heat the pan . Once rolls are cooled down cut into round shape of 1 inch thickness.
Put oil in the pan.Once it is heated, add mustard seeds, cumin seeds. Once it crackles, add pieces into oil. And mix well so that it will cover with oil. You can pinch of red chili powder, salt on it.
Once it fried well,remove from pan. Keep it in the serving bowl. Garnish with coconut,coriander leaves.

You can eat patra with combination of Kadhi or any gravy curry.
Or you are south Indian, make punch of Curd Rice and eat along with it.
Or you can just serve as Starters in the party :)
