Daal Bati

Ingredients:
For Bati:
Wheat Floor 3 Cup
Semolina 1 Cup
Corn floor 3 tb sp
Ghee 5 tb spoon
Jeera 1/2 tsp
Ajwain 1/2 tsp
Salt 1/2 tsp or to taste
Baking powder 1/2 tsp
For Daal:
Ghee 3 tb spoon
Mustards 1/2 tsp
Jeera 1/2 tsp
Turmeric Powder 1/2 tsp
Red Chili Powder 1/2 tsp
Coriander Powder 1/2 tsp
Jeera Powder 1/2 tsp
Garam Masala 1/2 tsp
Hing 1 pinch
Green Chili 3-4
Tomoto 2 chopped
Garlic - 2-3
Adrak 1-2 pieces

Method:
Bati
Mix all floor in a bowl. Add ghee,baking powder,jeera,ajwain and salt in it and knead the dough with luke warm water. Rest the dough for 1 hr. Make small dumblings of floor of small size.
Preheat the oven at max temp. Put all dumblings in a tray. Put for another 15 mins. Make some linings on dumling to bake properly. Remove from oven.

Daal
Cook all daal for 1 whistle in cooker. Then take a pan. Add ghee in it. Once it is heated, add mustards, jeera, garlic, ginger , hing in it. Then add haldi , then chopped tomato then coriander powder, jeera powder, garam masala. Then mix cooked daal and boil for 5 mins. Then add salt.Then garnish with coriader leaves.

Khatti Khatti Kadhi

Kadhi.... umm,... Yummy,,,!! Cant keep lunch without it. I prepare kadhi very simple way and easy to cook.

Ingredients :

Bengal gramflour 2 tbsp
Curd 1 cup
Water 300 ml
Curry leaves 8-10
Ginger garlic green chili paste 1 tsp
Musturd seeds 1 tsp
Jeera 1 tsp
Asafetida 1 pinch
Turmeric 1/2 tsp
Oil 1/2 tbsp
Salt to taste
Coriander leaves for garnish

Serves : 2

Method :

First mix curd ,water and gram glour and whip with blender.Take a wok and heat the oil. Add asafetida,musturd seeds. Once spatters, add jeera, g-g-g paste. Then add curry leaves. Then add turmeric.
then add curd mixture into it. Mix well. Add salt according to your taste. Keep for boiling.
If you think it is getting thicker , add water according to consistency of liquid.
Once done, garnish with coriander leaves. Khatti kadhi is ready to serve. You can eat it with plain rice or khichadi.

Note : You can add pakodas if you want to make pakoda kadhi before serving. If you want to make kindo of gujarati kadhi add 1 tsp sugar to get khatti mitha swad... ;)

Mutter Paneer

When I was kid, I was not fond of paneer, but when I started eating outside and I had no choice other than paneer. When I ate paneer, now think I wasted my many days without paneer.
I make paneer at home which is very low in fat. I post the recipe for paneer as well.

Ingredients :

Frozen peas 1 bowl
paneer pieces 3/4 bowl
onion chopped 2 medium size
tomato chopped 2 medium size
ginger garlic paste 2 tsp
cashew nuts 9-10 flakes
cream 1 small cup
red chili powder 2tsp
turmeric powder 1 tsp
coriander powder 2tsp
jeera powder 2 tsp
garam masala 1 tsp
Oil 2 tbsp
green chilies chopped 2-3 (optional)
Coriander leaves for garnish

Procedure :

In wok, pour 1 tbsp oil. once it is heated, add cashew nuts, once it is turn brown color, add chopped onion . And then add salt. If we add salt while sauting onion, it will absorb moisture from it and it cooks well .Then add tomatos. cook well . then add turmeric. and remove from flame. and aside for cool. Once it is cool, grind it in a fine paste.
Take same wok. add remaining oil. once it is heated,fry ur paneer pieces and keep aside. Then add ginger garlic paste in a remaining oil then add paste of oinion and tomato.
Add some water in it . and cook well. It gives some foam on top. It will tell u, it is yet to cook. Once it is done.
add red chili , coriander , jeera , garam masala powder,green chili pieces.Then add mutter once it cook , then add fried paneer and then add ur cream. cook well. Keep your gravy according to ur taste. then add little salt and garnish with coriander leaves.
Serve with tandoori roti or naan.

Tandoori Roti without tandoor

Every body likes tandoori roti very well. But a keep question how to make with out tandoor ?
So I found very easy way to make tandoori roti in toaster . and u trust me, it is really delicious to taste.
It is very simple and easy to cook. Below procedure is for serving 2 people.

Ingredients
Wheat flour 2 cup
luke warm water to need dough
oil 1 tbsp
salt to taste

Procedure

Take a bowl , put wheat flour . Add oil , salt in it. and mix well. Knead the dough by adding little water.
Make dough soft in touch . Once it is done , cover the dough with wet cloth and keep aside for 1/2 an hr.
After 1/2 and hr, knead the dough nicely . Heat the griddle.
Take a small ball of dough . Roll the ball in 4 mm in thick and 4 inch in length (to fit nicely in toaster).
Place on griddle.dry it till liitle brown color. then invert and do the same.
Once it it done , put in toaster and set the time for 3 mins and heat it in toaster.
Once it turns to balloon size , remove from toaster and brush little butter .
