Barva Baigan

Other day we had guests at home.And it was always me a question what to do cook if any one arrives at home. So I always like to prepare my fav dish ,of which I am gonna tell u the recipe.
Ingredients :
small sized baigan 4-5
roasted peanuts 1 small tea cup
grated coconut 1 tbsp
Tamarind juice 2 tbsp
Onion Paste 1/2 cup
Tomato paste/puree 1/2 cup
green chilies 4-5
garam masala powder 1tsp
turmeric powder 1 tsp
red chili powder 2 tsp (depends how spicy we eat)
ginger garlic paste 1tbsp
coriander leaves for garnish.
Oil 2 tbsp

Procedure
First of all , make the paste of onion with green chilies and keep aside. then put peanuts,turmeric 1/2 tsp,red chili powder 1 tsp,grated coconut,salt in a jar and make a corsely but nearest to fine, paste by adding little water. and keep aside.
now cut the brinjal(baigan) in a + sign , till stem , but not fully cut. Fill it with peanut paste.
Take a kadai, add oil. once it heated, add musterd seeds, once it is spatter, add jeera, then add ginger garlic paste, once it turn to light brown color, add curry leaves and onion paste.
fry paste till brown color, add remaining turmeric, red chili garam masala, coriender powder . mix well.
add tomoto puree. once it is fry once, add ur peanut paste, and mix well . once it is cook add ur stuffed brinjals and mixed well so that cover with paste. Add 1 cup water , tamarind juice and salt and cover it.
Cook till brinjal becomes soft in touch.

Garnish then with coriander leaves and serve with naan or tandoori roti.

Note : if you want to save cooking time, u can fry stuffed brijals in oil till become soft in adv and then add at the end.

  1. You cadn 3 tb spoon of roasted seasame seeds while grinding peanuts.

    Brinjals take more time to cook. to avoid more cooking time, you can cook brinjal seperately in microwave after frying for 5 mins in oil. But brinjals must filled with paste and must cook well in oil. Need to be very careful here, otherwise paste can be uncooked.
