Drumstick Pickle

Andhra Pradesh is called a land of Pickles . And my SIL makes nice pickles with nice taste. But never get chance to learn from her.  But as we are away from homeland, it is very difficult keep looking on bottle and do not eat just because we don't want finish soon. :) So this year started making pickles on my own so that I don't need to look into bottles. :)

Here is procedure as below :

Ingredients :

10-11 Drumsticks
1 cup heaped Red chili powder (you can reduce according to ur taste)
3/4 cup Salt
2 Cup Tamarind paste
1 tbsp Fenugreek seeds
4 tbsps Mustard seeds
1 tsp Cumin/Jeera
1 tsp Turmeric powder
3 cups Oil
2-3 Chopped Garlic

For tempering :

1 tbsp Oil
2-3 broken Dry red chillies
1 stick Curry leaves
1 tsp Mustard seeds
1 tsp Asafoetida
1 tsp Chana dal and Udad Dal (Bengal gram & split-ted Black Gram Lentils)

Method:

First of all bring fresh drumstick from Market.Wash and pat dry well and
Cut the edges of the drumsticks.Now chop the sticks into 1-2 inch in size.Remember do not remove the skin of drumstick. If you don't have ready made paste of tamarind then make smooth paste of it.
Take fenugreek ,mustard and cumin seeds and dry fry in a fry-pan for 2 mins. Then grind into smooth paste.
Now take same pan , add oil in it. Once oil becomes hot, fry drumstick pieces till
it changes colour . Also add garlic pieces here. Then takeout from oil and keep aside.
Now take the same oil for tempering, add Asafoetida,mustard seeds,lentils,red chilies, curry leaves. Add turmeric powder and ground powder. Mix well.
Add tamarind pulp and salt. Cook for 5-10 mins.Then add Drumstick and mix well.
After 5 mins remove from stove and keep aside to cool down . Once cool, put it air tight container and keep in refrigerator.
